What is Harima?
A baked sweet from Shirasagi Jinya: egg-yolk bean paste wrapped in a buttery dough. Familiar for those used to Western pastries.
Harima is one Himeji shop's own sweet, not a general type of wagashi you will find all over Japan. It is made mainly from wheat flour, white bean paste, egg, butter and condensed milk.
